Expanding the business in Cambridgeshire, BaxterStorey is delighted to have been awarded a four-year contract with the Wellcome Genome Campus, a scientific research campus located in Hinxton.
Whilst supporting the Campus’ commitment to sustainability, the new contract will see a transformation to the on-site restaurant, Murray’s, including a co-working lounge, build-your-own breakfast station and all-day grazing style menus.
The culinary team have introduced a wellbeing counter to create delicious and nutritious plant-based dishes made from local, seasonal ingredients, including rainbow bulgur with butternut squash and Food EQ smoked haddock and spring onion cakes.
The new menu offers freshly made sourdough pizzas, charcuterie and cheese sharing boards and small plates, from feta and avocado nachos to Cumberland scotch egg with apple and ale chilli chutney.
Combining its commitment to minimise food waste and reduce environmental impact, BaxterStorey has introduced ‘Wonky Wednesdays’, where our chefs will create dishes from surplus ingredients.
Alongside Murray’s, it will also provide catering for the Campus’ three cafes, Pebbles, Link Cafe and DiNA. All three will host artisan coffee bars and our Society grab and go range, including clean eating boxes and energiser pots. Inspired by the business’ Modern Baker recipe book, sweet treats will include pina colada cake, orange and poppy seed pretzels and banana custard muffins.
Recognising the change in working patterns, it plans to introduce an innovative solution to out of hours services for customers to self-pay at any time of day.
BaxterStorey’s food experiences agency FUEL will host a range of authentic food pop-ups across the campus, including BeyRoots and Curry on Naan Stop, keeping the food offer fresh and engaging for customers.
